I was surprised on Saturday, because Madison actually was willing to make Christmas cookies. I have a new Betty Crocker Best Christmas Cookbook, and I let her look at the cookie recipes and choose one. Here is the one she chose:
Minty Middle Treasures
1/2 cup granulated sugar
1/4 cup packed brown sugar
1/4 cup shortening
1/4 cup butter or margarine, softened
1/2 teaspoon vanilla
1 egg
1 2/3 cups flour
1/2 teaspoon baking soda
1/4 teaspoon salt
24 Andes Mint candies, unwrapped
Frosting
Candy Sprinkles
Heat oven to 400 degrees. Beat sugars, shortening, butter, vanilla, and egg in large bowl with electric mixer on medium speed. Stir in flour, baking soda and salt.
Shape 1 tablespoon dough around each mint. Place 2 inches apart on ungreased baking sheet. Bake 9 to 10 minutes or until light brown. Remove from baking sheet to wire rack and cool completely. Dip tops of cookies into frosting. Top with candy sprinkles.
Frosting
1 cup powdered sugar
i tablespoon plus 1 to 2 teaspoons milk
1/4 teaspoon vanilla
Few drops of food coloring
Mix until smooth and thick enough to coat.
The cookies were delicious! We made a double batch so Madison could take some home.
